Did the French chef Louis Désiré Derlon (1827-1902) ever wonder or ever think that his feel for culinary excellence and style would one day grow to become a luxurious hotel and restaurant, a touchstone for Maastricht and many other places? He surely would have shrugged his shoulders at the thought; but our historical understanding and respect for the history and traditions of Derlon are great.

In the cellar of the hotel, the history of the Netherlands’ oldest city is laid bare. This historical room contains roman artefacts; nine fragmentary relics from the time before our era, through to the fourth century AD. Amongst the items is a temple honouring Jupiter, complete with its own well.
